I think I may finally have got the chocolate ones right!

(The quest for a decent chocolate cupcake recipe has taken approximately 100 batches of cupcakes, 1 Betty’s Cookery School course (on Baking with Chocolate), and variants on about 30 recipes)

Turns out that the trick is in doing unexpected things with the basic ingredients.  Like melting the butter and sugar together first, and making the chocolate molten as well before it gets added.

Further proof that going against received wisdom is often the answer!

The base is now there, now I just need to perfect the icing, and work out how to insert some sort of lovely molten chocolatey middle.
